Foam-mat drying is a promising method due to involvement of proteins as foaming agent which acts like a wall material wrapping around bioactives and retards their degradation. In this study, powder properties of foam-mat dried carrot juice powders including 15% egg albumen (EA) and 15% egg albumen+ 10% whey protein isolate (WPI) during 90 days of storage at room conditions were evaluated by means of physical, chemical, thermal (DSC and TGA) and microstructural (SEM) analyses. The powder flow properties (wettability, hygroscopicity, degree of caking, Carr index and Hausner ratio) have been significantly affected from the moisture uptake during storage; however, powder flow properties of 15% EA+ 10% WPI powders were found to be better than 15% EA powders as it was also confirmed by particle diameter distributions that remained the same before and after the storage period. Besides, the total antioxidant, phenolic and carotenoid contents of 15% EA+ 10% WPI carrot powder was found comparably higher than 15% EA powders due to possible encapsulating mechanism of whey proteins. In addition to delaying of physical and chemical deteriorations in powders with WPI incorporation, thermal stability of the foam-mat dried carrot juice powders was also improved in 15% EA+ 10% WPI powder.

Çalışmanın amacı, dinlence, deniz ve çeşitli alternatif turizm faaliyetlerinin gerçekleştiği Marmaris’in, kırsal alanında arıcılık faaliyetleri ile ziyaretçi çekmeyi sağlayacak ve bölgede değer yaratacak apirota önerisi oluşturmaktır. Araştırma, Eylül 2022 tarihinde gerçekleşmiştir. Araştırma alanı Marmaris’in Hisarönü Körfezi ile İçmeler Koyu arasında çizilecek hattın güneyinde kalan ve arıcılık faaliyetleri yapılan kırsaldır. Çalışmada, nitel araştırma yöntemi kullanılmıştır. Araştırma alanında, apiturizmi geliştirme ve apirota oluşturmaya yönelik görüşlerin toplanması için görüşme tekniğinden yararlanılmıştır. Görüşmelerde yarı yapılandırılmış toplam 7 açık uçlu soru sorulmuştur. Araştırma alanı ile ilgili derinlemesine bilgi sahibi olan yerel arıcı ve turizm profesyonellerinden oluşan 10 katılımcının görüşlerine başvurulmuştur. Araştırma sonucunda araştırma alanının, apiturizm arzına sahip olduğu; kırsaldaki kültürel, tarihi ve doğal zenginliklerin bu arzı zenginleştireceği; apiturizm kapsamında yapılabilecek uygulamaların ve ürünlerin çeşitlendirilmesi gerektiği ortaya koyulmuştur. Elde edilen veriler ışığında apiturizmin gelişimine katkı sağlayacağı düşünülen bir apirota geliştirilmiştir.; The study aims to design an apiroute that will attract visitors with beekeeping activities in the rural area of Marmaris, and create value in the region. The research was carried out in September 2022. The research area is the countryside between Hisarönü Gulf and İçmeler Bay of Marmaris, which is located to the south of the line to be drawn and where beekeeping activities are carried out. The opinions of 10 participants, consisting of local beekeepers and tourism professionals who have in-depth knowledge about the research area, were taken. The qualitative research method was used in the research. In the field of research, the interview technique was used to collect opinions on developing apitourism and creating apiroute. A total of 7 open-ended questions were asked during the interviews. In the research findings; the research area has an apitourism supply; cultural, historical, and natural riches in the countryside will enrich this supply; It has been found that the practices and products that can be made within the scope of apitourism should be diversified. In light of the data obtained, an apiroute, which is thought to contribute to the development of apitourism, has been developed.

Camping–a growing niche in the tourism industry–allows participants to have a liminal experience. Using qualitative methods, we examine camp participants’ perspective through the lens of liminal theory. The data were obtained through participant observation and interviews with 27 campers. Camp participants’ liminal experiences are grouped into three dimensions: (1) learning in liminal spaces; (2) increased tolerance in liminal spaces and, (3) the effects of liminal spaces on eudaimonic happiness. Learning and tolerance in the camping experience has the potential to foster happiness, even after the participants return home. These findings from the Turkish experience contribute to a growing literature on liminality in camps and tourism more broadly.

Generative artificial intelligence (GAI) offers important opportunities for the hospitality and tourism (HT) industry in the context of operations, design, marketing, destination management, human resources, revenue management, accounting and finance, strategic management, and beyond. However, the implementation of GAI in HT contexts comes with ethical, legal, social, and economic considerations that require careful reflection by HT firms. The purpose of this study is to offer a critical examination of the effects of GAI applications across a broad spectrum of stakeholders in the HT industry, in an effort to integrate practical and academic insights and foresights and drive academic research forward. Through the contributions of a purposeful selection of scholars, educators, and industry-practitioners, along the tenets of the stakeholder theory of the firm, this study highlights the potential challenges and opportunities of GAI and considers how academics can navigate the (research) complexities of this rapidly evolving technological phenomenon.
